Amaranth
Grow Amaranth varieties for their tasty and tender young leaves, for their beautiful and long-lasting flowers, or even for the seeds of the grain varieties. Amaranth grain has been harvested since ancient times, and amaranth was one of the basic foods of the Incas. Amaranth grain is unusually high in complete protein, but has no gluten. It can be eaten as a grain (like one would eat rice or quinoa), or ground into flour. The leaves of several amaranth species are enjoyed as cooked greens around the world, particularly in India, Fiji, and China. Whether you're using amaranth for greens or grains, they are all very attractive plants that work equally well in the flower or vegetable bed.
Burgundy Grain Amaranth
Amaranthus hypochondriacus
Grow this ancient Aztec grain like quinoa for nutritious, gluten-free grains that mature at the end of summer. Huge plants grow 1.5-2m (5-6') tall, with flamboyant plumes of attractive burgundy flowers followed by copious white seeds. A show stopper in any garden. The immature leaves are also edible.

Emerald Green Amaranth
Amaranthus viridis
Plant this amaranth in early summer for a warm season harvest of young leaves that contain more iron and calcium than spinach. Known as Calaloo in the Caribbean. The bittersweet flavour is best in a stir-fry or soup.

Green Tails
Amaranthus caudatus
Luxurious, drooping, pale chartreuse green tassels retain their colour well after picking. Plant height 80-120cm (3'). Young leaves are tasty and nutritious, but it is also grown as an annual flower.

Love Lies Bleeding
Amaranthus caudatus
A spectaclar addition to any garden, many parts of these plants - including the leaves and seeds - are edible and are frequently used as a source of food in India and South America. The red colour of the inflorescences is due to the high content of betacyanins, similar to the related species known as "Hopi Red Dye" amaranth. Plant height 120-180cm (4-6').

Red Leaf Amaranth
Amaranthus tricolor
Also known as hinn choi, een choy, or yin choi. This heat lover is a very nutritious leaf vegetable. This variety has large, fleshy, pale-green or burgundy and green leaves that go well in salads. They can also be cooked quickly, faster than spinach. Plant in early summer in very warm soil and harvest by cutting young leaves which will re-grow.
